4 cups water
1 cup sugar substitute
4 cups fresh mint leaves, lightly packed
4 cups strawberries, hulled and halved
1 cup lemon juice, freshly squeezed
In a small saucepan, bring 2 cups of water, sugar substitute, and mint to a boil. Reduce the heat and simmer for approximately 10 minutes.
Remove from heat, and strain the liquid to remove the mint. Put the liquid into a blender and add 3 cups of. Blend the liquid until smooth and pour into a 2-quart pitcher.
Thinly slice the remaining 1 cup of strawberries. Add the strawberries, lemon juice, and remaining water to the pitcher, and stir. Add additional sugar substitute to taste if desired.
Cover and put into refrigerator until cold. Serve chilled.
