1 15-ounce container ricotta cheese
1 cup strawberries, sliced
1 tablespoon honey
1/2 teaspoon vanilla extract
1 1/2 tablespoon brown sugar
1 tablespoon basil
3 tablespoons balsamic vinegar
Combine the ricotta cheese, honey, and vanilla extract in a mixing bowl, stirring until it becomes a fine paste. Refrigerate for 2 hours.
Cook the balsamic vinegar and brown sugar in a pan over medium heat until dissolved. Bring to a boil and simmer for 3 minutes, then remove from heat and let cool. Add the strawberries and basil to this mixture, stirring well.
Divide among four glasses and top with the chilled ricotta cheese.
