2 cups ground turkey
1/4 cup sun-dried tomatoes, chopped
1 (10 ounce) package frozen chopped spinach, thawed
1/2 onion, chopped
1/4 cup low-fat feta cheese
1 cup oats
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 cup skim milk
Cooking spray
Preheat an oven to 400 degrees F.
Spray a medium-sized skillet with cooking spray and cook the sun-dried tomatoes, spinach, and onion over medium heat until tender, about 5-6 minutes. Remove from heat and mix in the feta cheese. Set aside.
In a large bowl, combine the ground turkey, oats, garlic powder, oregano, and skim milk.
Coat a baking pan with cooking spray. Cover the bottom of the pan with approximately 2/3 of the ground turkey mixture, creating a large indentation in the middle.
Fill the indentation with the spinach mixture and then top it with the remaining turkey mixture, so that the spinach mixture is encased within the turkey loaf.
Bake for 30-35 minutes or until the turkey is thoroughly cooked. Let the meatloaf stand for 5 minutes before serving.
