1 box whole wheat penne pasta
1/2 cup sun-dried tomatoes, chopped
1 cup sweet onion, chopped
1/4 cup garlic, minced
2 tablespoons olive oil
1 cup low-fat mixed Italian cheese, shredded
Red pepper flakes (optional garnish)
Cook the pasta until tender. Drain.
In a large pan over medium-low heat, cook the chopped sun-dried tomatoes, garlic, and sweet onions in olive oil. Reduce the heat when the onions are translucent, cover, and stir occasionally.
Add the penne to the tomato mixture and increase the heat, stirring well. When heated through, remove from the stove top and add cheese.
Serve when the cheese has melted. Add red pepper flakes if desired.
