1 1/2 tablespoon of vegetable oil
1 1/4 cups celery with leaves, finely chopped
1 1/2 cups onion, finely chopped
1 cup water
1/2 cup orange juice
2 tablespoons lemon juice
Dash of hot sauce
1 cup long-grain white rice, uncooked
1/4 cup slivered almonds
Cook the celery and onions in the oil for about 10 minutes or until tender.
In the same pan, bring the water, juices, and hot sauce to a boil. Add the rice, and bring back to a boil. Cover and let stand until the rice is tender and all liquid is absorbed.
Add the almonds and serve immediately.
