1 cup blueberries
1 lime
1 avocado
1 cup part-skim ricotta cheese
5 tablespoons honey
1 tablespoon finely chopped mint leaves
Grate the zest from the lime into a small bowl. Squeeze the juice from the lime into the same bowl and set aside.
Put the ricotta, avocado, 3 tablespoons of the honey, lime juice, and lime zest into the bowl of a food processor. Pulse the processor 12 times. Scrape the sides, process, and repeat for about 2 minutes or until smooth. Put this mixture into the refrigerator.
Put the remaining 2 tablespoons of honey into a microwave-safe bowl. Microwave the honey for 10 seconds or until it is fully softened. Add the blueberries to this bowl and stir carefully until the blueberries are coated.
After the avocado mixture is cold, add the chopped mint and stir. Divide the blueberries and avocado mixture evenly between 4 parfait or dessert dishes so that each one has 5 layers (bottom to top is blueberries, avocado, blueberries, avocado, blueberries).
