1 jalapeño pepper, chopped
3 teaspoons minced garlic
2 large shallots, peeled
2 cups mango, peeled and chopped
1/3 cup balsamic vinegar
1/4 cup fresh orange juice
1 tablespoon dried thyme
2 teaspoons olive oil
1/4 teaspoon salt
4 (6 ounce) tilapia fillets

Pulse the jalapeno pepper, minced garlic, and peeled shallots in a food processor. Add the mango, balsamic vinegar, orange juice, dried thyme, salt, and olive oil, processing until it becomes a smooth paste. Pour this mixture into a sealable bag.
Drop the four tilapia fillets into the bag and roll them in the marinade to coat evenly. Refrigerate for at least 20 minutes. Remove the fish and save the marinade.
Place the fillets in a broiler pan that has been coated with cooking spray. Broil 4 minutes on each side or until fish is flaky.
Meanwhile, boil the marinade in a small saucepan over medium heat. Reduce heat and simmer for 5 minutes.
Place the fish on a serving plate and pour the marinade on top.
