2 cloves garlic, minced
2 teaspoons olive oil
1 package (32 ounces) fat-free chicken broth
2 whole chicken breasts, cubed
1 package (9 ounces) cheese tortellini
1 can (14.5 ounces) diced tomatoes
1 package fresh baby spinach
1/4 cup chopped fresh basil
Sauté the minced garlic in olive oil in a soup pot until golden. Add the chicken broth and chicken breasts and bring to a boil. Continue cooking for about 5 minutes over medium heat.
Add the tortellini and cook according to the package directions. When cooked, add the tomatoes, spinach, and basil. Cook until the spinach has wilted.
