5 tablespoons olive oil, divided
1 large sweet potato, peeled, cut into cubes
2 large red potatoes, peeled, cut into cubes
2 large white potatoes, peeled, cut into cubes
1/2 large onion, diced
1 1/2 cups bell pepper, diced

Preheat an oven to 425°F. Prepare a large bowl of cold water.
Boil the potatoes in a large pot of water over medium heat until soft. Remove the potatoes into cold water for 1 minute. Drain.
In a large bowl, combine the potatoes with 3 tablespoons olive oil and the salt, pepper, and garlic powder.
Spray a baking sheet with cooking spray and transfer the potatoes onto the sheet. Bake for 30-45 minutes or until crispy.
Meanwhile, heat the remaining 2 tablespoons of olive oil in a pan on medium low heat. Cook the pepper and onion for about 10-15 minutes, until soft and slightly brown. Season with salt and pepper and cook for another 5 minutes.
Transfer the potatoes to a serving dish and sprinkle the pepper and onion mixture on top. Serve immediately.
