Ingredients

  • 1/2 cup + 2 tablespoons unsalted butter

  • 1 cup sugar

  • 3/4 cup and 2 tablespoons unsweetened cocoa powder

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground cardamom

  • 2 large eggs

  • 1/2 cup flour

  • 1/4 cup chopped roasted macadamia nuts

  • 1/4 cup finely chopped dried mango

  • 1/4 cup finely chopped crystallized ginger

Directions

  • Coat a baking pan with nonstick cooking spray and preheat an oven to 325°F.

  • Melt the butter in a saucepan and add the sugar, cocoa powder, and salt over low heat. Stir until the sugar and cocoa powder have dissolved. Remove from heat and cool until warm.

  • Stir in the vanilla extract and cardamom. Whisk in one egg at a time until the batter is shiny and thick. Stir in the flour and beat until combined. Add the nuts, ginger, and mango to the batter.

  • Pour the batter into the baking pan. Bake 25-30 minutes.

  • Cool before serving.
