1/2 cup + 2 tablespoons unsalted butter
1 cup sugar
3/4 cup and 2 tablespoons unsweetened cocoa powder
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon ground cardamom
2 large eggs
1/2 cup flour
1/4 cup chopped roasted macadamia nuts
1/4 cup finely chopped dried mango
1/4 cup finely chopped crystallized ginger
Coat a baking pan with nonstick cooking spray and preheat an oven to 325°F.
Melt the butter in a saucepan and add the sugar, cocoa powder, and salt over low heat. Stir until the sugar and cocoa powder have dissolved. Remove from heat and cool until warm.
Stir in the vanilla extract and cardamom. Whisk in one egg at a time until the batter is shiny and thick. Stir in the flour and beat until combined. Add the nuts, ginger, and mango to the batter.
Pour the batter into the baking pan. Bake 25-30 minutes.
Cool before serving.
