One 16- to 20-inch-long baguette, preferably whole-grain
1 large red onion, cut into 1/4-inch-thick rounds, divided
1 pound 93%-lean ground turkey
4 tablespoons mango chutney, divided
1/4 teaspoon salt
2 cups romaine lettuce, shredded
Preheat the grill to medium-high.
Cut the baguette into 4 equal portions, and slice each portion horizontally to open. Scoop out and discard approximately half of the bread from each side.
Mince a portion of the onion rounds to fill 1/3 cup. In a medium bowl, mix the minced onion with the turkey, 1 tablespoon of chutney, and salt. Using your hands, mix until well combined. Divide the turkey mixture into four equal portions, and form each portion into a burger.
Oil the grill rack. Grill the remaining onion rounds for 3-4 minutes per side until tender and partially blackened. Grill the burgers for 4-5 minutes per side or until a thermometer inserted into the center registers 165°F. Toast the bread on the grill cut side down.
Spread the remaining mango chutney on one side of the baguette. Top with a turkey burger, grilled onion, lettuce, and other side of the baguette.
