3 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach
2 cups cauliflower, chopped
1 cup Manchego cheese, shredded
1/2 teaspoon black pepper
1/4 teaspoon salt
1 cup liquid eggs
1/4 cup skim milk
Preheat an oven to 425 degrees F.
Thaw the frozen spinach by microwaving for 2-3 minutes. Drain.
Microwave the cauliflower until warm, about 2-3 minutes, then pulse in a food processor until it resembles grain.
In a skillet, heat the oil over medium heat. Sauté the onions and garlic for 5-6 minutes. Add them to a large bowl and combine with the cauliflower, spinach, cheese, salt, and pepper.
In another bowl, whisk together the eggs and milk. Add this to the vegetable mixture and stir well.
Grease a 9x13 inch baking dish. Pour mixture into dish and spread evenly.
Bake the pie for 25-30 minutes or until lightly browned.
