Cherry sauce:
2 cups fresh pitted cherries
1/4 cup water
1/4 cup honey
2 teaspoons cornstarch
1 teaspoon lemon juice
1 teaspoon vanilla extract
Waffles:
2 cups whole-wheat flour
1/2 cup fine cornmeal
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
1/4 cup packed light brown sugar
2 cups non-fat buttermilk
1 tablespoon olive oil or canola oil
2 teaspoons vanilla extract

To make the cherry sauce, combine the cherries, water, honey, cornstarch, lemon juice, and vanilla extract in a small saucepan and bring to a boil over medium heat. Stir occasionally until the sauce thickens, about 2 minutes.
To make the waffle batter, whisk together the flour, cornmeal, baking powder, baking soda, and salt in a large mixing bowl. In another bowl, beat the eggs and brown sugar, then stir in buttermilk, olive oil, and vanilla extract until thoroughly blended. Add this to the flour mixture and stir well.
Lightly coat a preheated waffle iron with cooking spray. Add batter to cover 2/3 of the waffle iron surface, close, and cook 5 minutes or until waffle is golden. Remove waffle and repeat with the remaining batter.
Warm the cherry sauce and pour over waffles.
