2 cups grated zucchini
2 teaspoon vanilla extract
2 cups whole wheat or whole grain flour
1 teaspoon salt
1/2 cup olive oil
1 1/4 cup maple syrup
1/4 cup cocoa powder
1/4 teaspoon baking soda
Set oven temperature to 350°F. Mix together the flour, salt, cocoa, and baking soda. Add the vanilla extract, olive oil, and maple syrup and stir.
Fold in the grated zucchini to the mixture.
Grease and flour a 9X13 inch pan. Pour the mixture into the pan.
Bake the brownies for 25-30 minutes or until a toothpick, inserted into the brownies, comes out clean.
Let brownies cool and then cut into 25 square pieces.
