3 small zucchini, cut lengthwise into 1/4-inch thick slices
1 tablespoon olive oil
Salt to taste
Black pepper to taste
1 1/2 ounces fresh goat cheese
1 tablespoon fresh parsley, chopped
1/2 teaspoon lemon juice
2 ounces baby spinach
1/3 cup basil leaves
Preheat a grill to medium heat. Brush the zucchini slices with olive oil and sprinkle with salt and pepper. Grill until tender.
In a small bowl, combine the goat cheese, parsley, and lemon juice.
Put 1/2 tablespoon of the mixture in the center of each zucchini slice. Top with a few spinach leaves and a basil leaf and roll up. Place seam side down, or hold together with a toothpick. Serve.
