Ingredients

  • 3 small zucchini, cut lengthwise into 1/4-inch thick slices

  • 1 tablespoon olive oil

  • Salt to taste

  • Black pepper to taste

  • 1 1/2 ounces fresh goat cheese

  • 1 tablespoon fresh parsley, chopped

  • 1/2 teaspoon lemon juice

  • 2 ounces baby spinach

  • 1/3 cup basil leaves

Directions

  • Preheat a grill to medium heat. Brush the zucchini slices with olive oil and sprinkle with salt and pepper. Grill until tender.

  • In a small bowl, combine the goat cheese, parsley, and lemon juice.

  • Put 1/2 tablespoon of the mixture in the center of each zucchini slice. Top with a few spinach leaves and a basil leaf and roll up. Place seam side down, or hold together with a toothpick. Serve.
