#2. A can't-go-wrong staple: greens and eggs
Sauté kale, onion, garlic, and red pepper with a little salt and pepper, curry, or cumin. Fry an egg, top it with pepper, and lay it atop. Bam! Veggies and eggs is what I'm talking about here, and it doesn't really matter how you do it. This breakfast option can be as simple or complicated as you like: sautéed spinach, onion, and a hard-boiled egg; steamed chard, some pepper and salt, and an egg over easy.
